Not only is this pudding delicious, but you also get a punch of antioxidants from the cocoa powder, goji berries, and cacao nibs – triple threat! It also boasts a good amount of plant protein from the tofu to keep you satisfied and full.

  1. Combine silken tofu, cocoa powder, and maple syrup in food processor or blender. Blend until smooth, scraping down the sides as needed.
  2. Top each serving with 1/2 tsp cacao nibs and 1/2 tsp goji berries and garnish with a sprig of fresh mint (optional).
